
If anyone is looking to add a new soup to their Fall/Winter cooking menu, this one was a hit in our house and it's got a unique flavor...
Indian Mulligatawny Soup
1-2 onions, chopped
1 pound chopped chicken, beef or lamb, cooked (I used chicken)
Vegetable or chicken stock (6 cups)
1 can of coconut milk
2 cups water
1 tsp ground cumin
1 tsp ground coriander
1 tsp chili powder (I just used a dash)
2-3 tsp curry powder
1-2 cups rice
salt to taste
pepper to taste
Mixed vegetables like beans, peppers, corn or peas (opt)
1. Fry the onions in butter until light brown
2. Remove from pan, add meat and brown
3. Add onions back to pan with curry powder and fry for a minute.
4. Add remaining ingredients, simmer together at least 30 minutes until rice is cooked. Enjoy!
